Trying to find actual concrete data on what size etc is most effective. There seems to be very little research.

The difficulty with this survey is that you haven't defined the contents of a seed ball.  The more clay, the harder the ball and the more difficult to break it down.  Also if you want to plant in the spring vs fall.  Also your seed size, obviously a peach stone does not need as much of a coat as say a grain of rice. Generally I keep mine under 3 cm diameters.
